Get ready for summer family potlucks with a refreshingly cool Greek Salad featuring Dreamfields Rotini.
Ingredients:
225g Dreamfields Rotini
1/2 cup chopped red onion
1/2 cup sliced black olives
1/2 cup (50g) Feta cheese, crumbled
1/2 cup chopped green pepper
100g Roma tomatoes, quartered
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
Salt and pepper to taste
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 cup = 4 ounce/100g measuring cup
Directions:
Cook Rotini according to package directions; rinse in cold water and drain well.
Whisk together olive oil, red wine vinegar, salt, pepper, basil and oregano until well blended.
Toss pasta gently with vegetables and dressing mixture.
Refrigerate before serving.
