Dreamfields is made with a unique recipe that protects all but 5 grams of the carbohydrates per 56g (dry) serving from being digested.
Historically, reducing fat was seen as the best way to achieve a healthier lifestyle. However, more
recently, portion control and reducing digestible carbohydrates within the diet have provided a
better solution to managing weight and help normalise blood glucose levels (fuel for the body).
Particular interest has focused on the use of dietary fibres - especially soluble fibres such as guar
gum, pectin, locust bean gum, xanthan gum, psyllium and inulin and insoluble fibres such as
resistant starch and resistant dextrins to help manage weight and control blood glucose levels.

Soluble fibres have been shown to modify food microstructure, texture and viscosity (thickness/
tackiness) which can modify starch granule digestibility, whereas insoluble fibre generally reduces
the amount of digestible carbohydrates in a food. Both influence the blood glucose rise.
Dreamfields’ unique blend of fibre and protein is balanced to provide functional properties that
modify the product’s microstructure and influences starch granule digestibility. These changes,
shown by scanning electron microscopy (Figures 1 and 2), can help provide effective metabolic
modification to influence satiety, weight, blood glucose levels and energy.
 
During manufacturing a ‘matrix’ or ‘net’ is created within the semolina flour, thereby preventing the
body’s starch-digesting enzymes from breaking down digestible carbohydrates into glucose. This matrix serves two functions - firstly it prevents the starch molecules from swelling during cooking,
making them less available for digestion; secondly it blocks the body’s digestive enzymes from
breaking down the starch. However, the matrix is not completely solid, which is why 5 grams of carbs
are digested per 56g (dry) serving.
This process also has a direct influence on the product’s Glycemic Index, which is a measure of the
speed at which the carbohydrates in the food are digested and absorbed as glucose.

Our ‘5 grams Digestible carbs’ claim refers directly to the products’ Glycemic Index (GI) value of 13 (56g dry serving).

Foods with a high Glycemic Index cause a rapid rise in blood glucose, while foods with a low Glycemic Index maintain a relatively constant blood glucose level. High Glycemic Index foods are a rapid energy source but this causes a rapid feeling of hunger as glucose levels deplete. By comparison, Low Glycemic Index foods release energy at a slower more constant rate, which prevent such hunger feelings. Foods like Dreamfields pasta, that are high in fibre, give a constant energy supply.
